I was invited to be a judge at this year’s Cochon 555 in Philadelphia. Cochon 555 is a culinary competition, tasting event and celebration to promote sustainable farming of heritage breed pigs. 5 chefs, 5 heritage pigs and 5 winemakers at each event. As a bonus this year, another pig and a pair of chefs were added for another round of tastings after the competition.

There were tables set up in the ballroom at the Le Meridien, Philadelphia. One table for each competing chef. The judges moved from table to table with their scoring tablet.

Brady Lowe, founder of Cochon 555, hosted the event. The chefs and their teams were in fighting mode and can be seen adding the finishing touches at the judging tables until the very last minute.

Pig Butchering Demo:

Marc Pauvert of the Four Seasons Baltimore butchered a pig for the audience. The butchered parts were sold off at the event to benefit Drexel University.

Scott Drewno, two time Cochon 555 Washington DC champion, was among the judges. It was incidentally also his birthday that day.
